Bear N Mom Recipes - Bean Soup with Ham
This recipe was the one that got me started on the first Recipes From Nunny Website.
While I was monitoring a game site, someone asked if anyone had a good recipe for ham and bean soup. Of course, I had to brag and say that if my mother-in-law didn't have a recipe for it that it just wasn't good eating. I looked in Nunny's treasure trove of recipes and found this one with the telltale check mark. If you have ever been in a game chat room you know it takes time to type out a recipe but she got it. Later that week, my friend told me that she had never had such good soup.
There is nothing special in the ingredients for this soup but my theory is that you need to be patient to make good soup. In other words, the answer to "Is it soup yet?" is "Not yet; all good things come to he who waits."
Ingredients
- 1 lb. Dried beans
- chunks of leftover ham
- 3 small potatos diced
- 2 med. Onions diced
- 1 cup diced celery
- 1 small carrot diced
- dash of garlic powder
- salt & pepper
cooking instructions
Cover beans in pot with water and bring to boil. Boil for 2 minutes. Remove from heat, cover and let stand for an hour. Drain beans and return to soup pot. Cover with water to make 5 qts. Bring to boil. Reduce heat and simmer for 2 hours until beans mush. Add remaining ingredients except salt and pepper and simmer for 1 hour. Season to taste. Makes 4 quarts.
