Bear N Mom Recipes - Carrot Cake with Cream Cheese Icing

This is a favorite of mine because I really like the spicey taste and the cream cheese icing. I would normally put the icing recipe into it's own hub but this time I'll just put it in here for convenience.
Ingredients How To Mix and Bake
1-1/2 cups corn oil
2 cups sugar
3 eggs
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons vanilla
1 teaspoon salt
2 cuts shredded carrots or 4 medium
1 cup chopped walnuts
1/4 cup crushed pineapple & bit of juice
You can add raisens if desired.
How To Mix and Bake
Combine sugar and eggs and then add oil.
Mix together flour, cinnamon, soda and salt.
Add to egg mixture and then add additional ingredients.
Mix until blended.
Pour into greased 13x9 pan.
Bake at 350° for 50-60 minutes.
Ice with Cream Cheese
Cream Cheese Icing
Ingredients
1 3 oz cream cheese
1-1/4 cups powdered sugar
1/2 cup margarine
1/2 cup chopped nuts on top
How To Mix and Bake
Mix cream cheese, margarine and sugar until fluffy..
Spread over cake or cupcakes.
Sprinkle nuts if desired
