Fritters and Fritter Batter

Now here's an old-fashioned recipe that you don't hear too much about today but they are oh so good.  Sure they are fried in oil and sure they could be high in cholesterol because of the oil.  Let's get our thinking caps out here and if you read labels I'm sure you can find a safer oil to use such as Canola Oil.

Batter Ingredients

  • 1-1/2 cups flour
  • 1/4 teaspoon salt
  • 2 tablesppons baking powder
  • 1 egg
  • 2/3 cup milk
  • 2 tablespoons powdered sugar (for sweet fritters only)

Mix and sift dry ingredients.  combine milk and egg until well beaten and add to dry ingredients, beating constantly.  The batter should be thick enough to entirely coat the food.  If too thick add more milk; if too thin add more flour.

3 large apples

Pare, core and cut apples into 1/4" slices. Add to fritter batter and drop by spoonsfuls into hot oil at 360-370°. Fry until tender, turning frequently with slotted spoon. Serves 6.

Drain the liquid from 1 can of whole kernel corn or defrost frozen whole kernel corn and drain all liquids.

Mix the corn into the fritter batter and drop by teaspoons into the preheated oil.

Remove the fritters to paper towels to drain the excess oil.

  • 6 bananas
  • 2 tablespoons lemon juice
  • powdered sugar

Peel bananas and cut each in halves lenghtwise. Then cut in two crosswise. Sprinkle with powdered sugar and lemon juice and let stand 30 minutes. Drain, dip in the friter batter and fry in oil at 360-370° until done, turning frequently with slotted spoon.

Peel and slice fresh peaches, removing stones. Sprinkle with powdered suger. Dip each piece in fritter batter and fry in oil at 360-370° until tender.
