Bear N Mom Recipes - Rice Pudding
I know it's a lot easier to open a can or to make this from a box. But where is your sense of adventure? Doesn't it make you feel good to make something from scratch and watch the faces of your family when they know you took the time to go the extra mile?
So here we go with Rice Pudding.
- 1/2 cup rice (or 2 cups cooked rice)
- 1/2 cup raisins (optional)
- 6 eggs
- 1/4 to 1/2 cup sugar
- 1 table spoon vanilla
- 1 quart milk
Cook rice in salted water and add raisins; boil a few minutes to soften raisins. If using uncooked rice, cook as directed and add softened raisins.
Mix together eggs, sugar, vanilla and milk. Pour over rice in casserole. Sprinkle with cinnamon and/or nutmeg.
Cook at 300° for 1 hour.
Slow Cooker Rice Pudding
The same result can be made by simply precooking the rice and then following the rest of the recipe in the slow cooker.
Set the temperature on low and cook until the custard cooks through the rice and becomes a pudding mixture.
